Broccoli Salad with Carrot, Bell Pepper, and Yogurt Dressing: 


Ingredients:

  • 2 cups broccoli florets

  • 1 large carrot, grated
  • 1 red bell pepper, diced
  • 1/4 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste


Instructions


  1. Steam the broccoli florets for 3-4 minutes until tender but still crisp.
  2. In a large bowl, combine the cooked broccoli, grated carrot, and diced bell pepper.
  3. In another bowl, mix together the yogurt, lemon juice, honey, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and toss until well combined.
  5. Serve immediately or refrigerate before serving.
