Ingredients:

  • 2 cups broccoli florets
  • 1 large carrot, grated
  • 1 yellow bell pepper, diced
  • 1/4 cup sliced almonds
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

  • Instructions:
    1. Steam the broccoli florets for 3-4 minutes until tender but still crisp.
    2. In a large bowl, combine the cooked broccoli, grated carrot, diced bell pepper, and sliced almonds.
    3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to make the dressing.
